For the past few months, I’ve been posting the occasional recipe on Facebook, but I haven’t been very happy with the formatting options available. So I’m switching over to my blog and will share the posts on Facebook instead.
A few weeks ago, my doctor asked me to submit a couple easy recipes to her newsletter. She recommends a diet rich in vegetables, and patients have been asking for simple recipes to get them going. I thought this was a great idea. So today I’m sharing a recipe for my favorite go-to breakfast that you can make in less than 15 minutes. This is a very versatile recipe that you can modify to incorporate whatever vegetables you like, and you can even add cheese, prosciutto, olives or whatever is available in your fridge that day.
Here’s what you will need:

2 small bowls
10-12” frying pan with lid. I recommend a ceramic frying pan if possible. This recipe is easiest with a non-stick surface, but most non-stick pans contain Teflon. When they age, tiny cracks and cuts form in the surface of the pan and Teflon starts getting mixed into your food. Ceramic frying pans do not have this problem and provide a great non-stick surface.
Ingredients:
2 tablespoons cooking oil
1 cup broccoli florets*
1 cup zucchini
2 stems green onions
2 eggs
salt
pepper
Warm up a large (10-12”) frying pan for a couple minutes on medium-low heat and place 1 tablespoon of cooking oil inside.
Meanwhile, wash and cut up broccoli florets, zucchini and green onions into small pieces. Once the frying pan is warmed up, put in all the vegetables and cover with a lid. Cook for about 3-5 minutes until tender. Season to taste with salt and pepper, remove and place in a bowl.
Beat the eggs well in a small bowl and add a little salt. Put in the other tablespoon of cooking oil into the pan. Pour in the beaten egg and quickly swirl it inside the pan to form a thin crepe. Cover the pan and cook for a couple minutes until set.
Add the vegetables and spread around one half of the egg crepe. Flip the eggs over the vegetables to form a half moon shape and cover the vegetables. Cook for another minute. Remove carefully to a plate and enjoy!
*Trader Joe’s sells bags of organic broccoli florets that are already cut up. They also have great prices on organic zucchini.
